London Dry Gin – The Process, and what makes it different
The most common style of gin is London dry gin, which refers not to the place of origin but to the distillation process.
London dry gin is a high-proof spirit, produced in a column still and redistilled following the addition of botanicals added to the base spirit.
In addition to juniper, London dry gin is made with a small amount of citrus botanicals such as lemon and bitter orange peel. Other botanicals often used are anise, angelica root, orris root, cinnamon, coriander, and cassia bark.
An authentic London dry gin, such as Greenall’s, will be very dry with a smooth texture lacking in harshness. The flavour will be harmonious with a crisp character and pronounced juniper flavour.
